We have had this soup several times this year so far. It is so easy to make, has a ton of flavor and is a yummy leftover. You can find the recipe here, although I usually skip the chili and squeeze the juice of one lime into the soup before serving. You can use leftover chicken also, and it works great.

Yum! My parent's neighbor brought this over Christmas eve and it was the first time I'd had it. I was a fan, but had the hardest time remembering the name. Thanks for the link. It will probably be seeing an appearance at our table next week!
