potatoes

I need help.  I like potatoes, but am a horrible cook so don't know how to use them in a variety of ways.  Potatoes are very inexpensive, in fact it is always cheaper for me to buy a whole bag instead of just a few, but inevitably some of them go bad before I can use them all up.
So, I need potato advice. How do you use your potatoes?  Any good recipes I should try?

Leave up to an Idahoan! A few that are REALLY easy. Baked potato....you can even cook it in the microwave so that it doesn't take all day to cook. Poke holes in the potato, put it in a baggie, and microwave!
Italian potatoee: cut the raw potatoes into about 2" by 2" pieces. Place in a glass baking dish. Drizzle with EVOO (Extra virgin olive oil) or cooking oil, shake a bit of italian seasoning and garlic if you like and bake for about 45 mintues at 375 covered. Those are some easy recipes! Also a family favorite is home make french fries! So good! I have a keep frier, you just need oil! Soooo good. 2 potatoes make more than enough for 2 people! Let me know if you need the frier!

we don't really eat very many potatoes. but when we do, we usually just bake french fries with rosemary and they're pretty good. the pioneer woman has a recipe for "crash hot" potatoes which i like (http://thepioneerwoman.com/cooking/category/sides/potatoes/). I put mashed potatoes and peas in Indian samosas - that is super yummy. and we eat them in roasts often.

Another Idaho girl with suggestions (though really, we're having the same problem. We had a 10 lbs. bag, and our neighbor dropped off another 10 lbs. bag for letting him borrow our snow shovel. I can usually handle 10, but 20 lbs. is a LOT!)

Microwaved baked potatoes get the most mileage at our house. It's easy to switch it up with the toppings.

Potato salad (feels like summer!) uses up quite a few. Au gratin potatoes, garlic mashed potatoes (Chris's favorite), oven fries, as home fries/hash browns for breakfast, twice baked potatoes, potato soup or used in stews, and roasted in the oven.

And if all else fails, share a bag with neighbors.

where to begin? Before you let some get bad and throw them out cube them or thinly slice them, boil them for a few minutes and drain them and cool them and stick them in a bag in the freezer to add to your next soup, veggie dish or over broccoli with cheese sauce! I have tons of recipes if you want some!
